Ever since Chicago-born chef Daniel Rose moved from the 9th arrondissement to a renovated 17th-century house in Les Halles in July 2010, he's been playing to a packed house with his inventive cuisine du marche menu. This talented American shows off just how cosmopolitan the city's culinary talent pool has become, and Parisians have been swooning over dishes such as Basque country trout with avocado and coriander flowers and grilled New Caledonian prawns on a bed of shaved baby fennel. There's also Buvette (wine bar) in the basement, with a selection of charcuterie, cheese and several plats du jour; and with reservations tough to land for a table upstairs, it's a good bet for anyone who wants to taste Rose's wares without going through the reservation wringer.

Booked at Spring based on the write-up in Bon Appetit. We are Americans living in SW France, so we were favorably inclined to find an American chef in Paris. We are not easily impressed by food or wines. We had a very early seating (7 pm) and when I had spoken to the person taking reservations two weeks prior, she had stressed that we should arrive on time as there was a 9:30 seating. We were accompanied by our miniature poodle, who was immediately served a dish of water on a saucer and checked on throughout the meal. We started with a glass of excellent champagne, while we decided whether to add the wine pairing to our meal. We had been asked earlier about any food allergies, and as it turned out, they had arranged for my husband to have a different appetizer because he was allergic to what was otherwise being offered. I had a wonderful melon and cucumber with mint appetizer, my husband had smoked potatoes with shaved sausage. This was followed by a red mullet served with olives and a broth that was to die for. We then had grilled langoustines on a bed of roasted fennel, small deliciously toasted croutons with a "white gazpacho" (I asked Daniel what was it in - ground almonds, milk, a little bread). This course was followed by a wonderfully roasted duck breast with a small amount of confit, accompanied by a roasted white peach. For dessert, we had four different petite dishes - melted chocolate fudge with framboise (I'm not a big chocolate fan and this was divine!), a lemon whip with chocolate shavings, citrus sorbet over blueberries (my favorite) and coffee ice cream with almonds. We went for the wine pairings, which turned out to be an excellent choice. They were all white wines and perfectly paired with the dishes. The service was prompt but unobtrusive, the sommelier was knowledgable and we enjoyed discussing the wines with her. Never did we feel rushed. Our table upstairs allowed us a full view of the kitchen and all the preparations, which were a delight to observe. The food was fresh, light with subtle flavors that were such a joy to experience. We were there on the last night before their summer holiday (although they're serving lobster sandwiches for the next three days), and we had no sense of a one foot out the door attitude that we've had at other restaurants about to embark on summer break. We chatted with Daniel as we were leaving the restaurant, being aware that he was up to his eye balls in the service of the evening. Nonetheless, he took the time to briefly chat with us and asked whether we had enjoyed his food. I would go out of my way to eat here again - delightful and delicious.
